Mediterranean octopus salad
- 1 octopus of 1 kg
- 2 tomatoes
- 1 Cucumber
- 2 tablespoons of pitted black olives
- 1 Tropea red onion
- 50 g of Songino salad
- 1 Lime
- extra virgin olive oil to taste
- salt to taste
First clean the octopus, once clean rinse it well under water.
Boil the water in a large saucepan and then immerse the octopus, leaving it to cook with the lid on for 30 minutes.
After the time has elapsed, test the cooking by sticking the meat at the attachment of the tentacles: it must be soft.
Let the octopus cool completely in its water.
In the meantime, dedicate yourself to cutting the vegetables. Cut the tomato into chunks and the cucumber into slices. Peel and slice the onion finely. Once the octopus has cooled, cut it and transfer it to a salad bowl. Add the vegetables, the sliced olives and the salad. Season everything with oil, lime juice, salt and mix. Serve it fresh and your dinner is done!
