The crackle of dry leaves in the fireplace, the deep and enveloping smell of burning wood, the pungent air. The Lombardy mountains have a truly unique atmosphere.
And what better way to enjoy a weekend in a cozy mountain hut than with a tasty recipe that can warm the heart and satisfy the palate?
Here is our recipe for a delicious one Spinach pie on parmesan velvety .
Let's start with the ingredients.
For the pie:
- 400 g of spinach
- oil to taste
- 200 g of parmesan
- 2 or 3 eggs
- Salt to taste
- white pepper to taste
- rice flour
- mozzarella cubes
For the velvety:
- half a liter of fresh cream
- 200 g of grana padano or parmesan cheese
Once the ingredients have been gathered, we are ready to begin.
Sauté the spinach with the oil, add a little salt and blend with the white wine. After sautéing them, place the spinach in a bowl and blend them with a mixer or hand blender. Then add parmesan cheese, eggs and a generous sprinkling of nutmeg. Finally, season with salt and white pepper. Mix all the ingredients well and fill the oiled and floured molds with the rice flour. As a final touch, add a cube of mozzarella in the center of the patty. Now, it's time to bake: in a hot oven at 180°/200° for about 15 minutes.
While the pie is cooking, prepare the soup.
Put the cream and the grated parmesan in a pan with high sides. Melt and mix the two compounds in a bain-marie, but the water shouldn't boil but only simmer. When the two ingredients are perfectly blended, turn off the heat, season with nutmeg to taste and pour it onto the plate.
Remove the pie from the oven, place it on the velvety and decorate with a few chives.
